Chechen Samosa Recipe

Chechen samosas, also known as chebureki, are delicious savory pastries filled with a variety of ingredients such as minced meat, onions, and spices, and then fried until golden brown. Here's a basic recipe to make Chechen samosas:

### Ingredients:

#### For the dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 tablespoons vegetable oil

#### For the filling:
- 1 lb minced meat (beef, lamb, or a combination)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Vegetable oil for frying

### Instructions:

#### 1. Prepare the dough:
1. In a large mixing bowl, combine the flour and salt.
2. Gradually add the warm water and vegetable oil, and mix until a dough forms.
3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

1. In a skillet, heat some oil over medium heat. Add the chopped onions and minced garlic, and sauté until they become translucent.
2. Add the minced meat to the skillet and cook until it's browned and cooked through.
3. Season the meat mixture with ground cumin, ground coriander, salt, and pepper. Stir well to combine.
4. Remove from heat and let the filling cool completely.

#### 3. Assemble the samosas:
1. Divide the dough into small equal-sized balls.
2. Roll out each ball into a thin circle, about 6-7 inches in diameter.
3. Place a spoonful of the meat filling on one half of the dough circle, leaving a small border around the edges.
4. Fold the other half of the dough over the filling to create a semi-circle shape.
5. Press the edges firmly to seal the samosa.
6. Repeat with the remaining dough and filling.

#### 4. Fry the samosas:
1. Heat vegetable oil in a deep frying pan over medium heat.
2. Once the oil is hot, carefully place the samosas in the pan, a few at a time, making sure not to overcrowd the pan.
3. Fry the samosas for about 3-4 minutes on each side, or until they are golden brown and crispy.
4. Remove the fried samosas from the oil and place them on a plate lined with paper towels to drain excess oil.

#### 5. Serve:
1. Serve the Chechen samosas hot with your favorite dipping sauce or chutney.

Enjoy your delicious Chechen samosas!
